Apple Aroma: Enhancement of Apple Volatile Production Using Precursor Treatments

In this project, the production and characterization of apple volatiles were investigated by chemical and sensory studies. Apples were exposed to specific precursor solutions of alcohols, acids and aldehydes. It was found that the treated apples had greater levels of aroma volatile production as compared to the control. This shows that apple aroma can be increased, enhanced and improved because the apple has the ability to synthesize specific aroma compounds. This study also provides evidence that unique volatile profiles can be generated by apples. Precursor feeding has the potential for use in the creation of novel commercial fruit products.
