Shining a Light on a Toxic Issue

Student: Carly Levy & Caila Henderson

District/Region: Chignecto Central Region

Event: 2007 Canada-Wide Science Fair

Carly and Caila are students at South Colchester Academy and in their project they studied the effects of light exposure on three varieties of potatoes in the interest of consumer health and safety.

Potatoes were exposed to light for 15 days to see if light exposure would increase glycoalkaloid levels. HPLC was used to measure the levels of these toxins before and after light exposure. High levels of glycoalkaloids can be harmful to humans.

Their project won two Bronze Medals at the 2007 Canada-Wide Science Fair. They are two of Nova Scotia's young scientists and tomorrow's innovators. Congratulations, Carly and Caila!
